Part One – The Barista Bureau

Welcome to the ‘Recipe Page’ – here is where you will find details of all our Baristas ‘Signature Coffees’.

Let’s start with the characters in The Barista Bureau – an international crime fighting syndicate with a taste for great coffee!

The Commodore – Jolie Sartre

Signature Coffee – Pouvoir du Café

Ingredients

Jolie begins by making her own version of Kahlua using a Columbian Coffee (strictly Hard Bean is preferred) plus white rum, vanilla bean, natural unrefined premium brown sugar.

1 oz Kahlua

1/2 oz Quality Brandy

1 tsp premium chocolate syrup (Jolie makes her own)

A pinch of ground cinnamon according to taste

1 cup of fresh brewed Columbian Coffee (strictly hard bean is preferred)

Whipped Cream is optional

Method

Put the Kahlua, brandy, chocolate syrup and cinnamon in a generous cup. Pour in the hot coffee, whisk gently, top with cream if desired.

Signature Coffee – Légion du Café

Ingredients

1 cup of water

1 tbsp of finely ground, dark roast Arabica Coffee Beans, powder consistency

1/8 tsp ground cardamom or 1 cardamom pod

1 tbsp natural unrefined premium brown sugar (or according to taste)

Method

Place the water and sugar in an ibrik or cezve, slowly bring to the boil.

Remove from the heat, add the coffee and the cardamom.

Bring back to the boil until a rich foam forms on the surface.

Serve into small cups, allow to sit for a moment, the grounds will sink to the bottom.

Signature Coffee – Indé du Café

Ingredients

1 cup of premium coffee preferably from India’s Kerala Region

1 tbsp natural unrefined premium Brown Sugar

1 tbsp heavy or whipping cream

1/2 tsp ground cardamom (add according to taste)

Almond Flavour (use a premium grade, add according to taste)

Crushed Ice

Method

Grind the coffee, add the cardamom, prepare the coffee according to taste

Add the sugar and the Almond flavour, allow to cool

Half fill a highball or any tall glass with crushed ice

Fill 2/3 with coffee

Use back of spoon to float the cream over the coffee
